Voima-Papu Mämmi – traditional Finnish Easter dessert
Gluten-free "mämmi"
Ingredients
- 250 g of dried plums
- 250 g peeled potatoes
- 1 l of water (saved from cooking the plums)
- 2 dl buckwheat flour
- 1½ dl Voima-Papu broad bean flour
- 3 dl dark syrup
- 1 dl organic honey
- 1½ teaspoons of salt
- 1 tablespoon ground orange peel
Method
- Peel and boil the potatoes.
- Also boil the plums in plenty of water until soft. Afterwards, save 1l of the cooking water.
- Puree the potatoes and also the plums with a stick blender.
- Add the other ingredients (buckwheat flour, broad bean flour, syrup, honey, salt and orange peel). Mix in approx. 1 liter of the saved plum cooking water.
- Pour the mixture into a 2.5 l cake tin and let the mixture sit at room temperature, covered, overnight.
- Bake the mixture, the next day, in the oven at 150 degrees for approx. 2 hours.
- Let the mixture cool at room temperature for a day, then put the mixture in the refrigerator.
- Mämmi can be eaten chilled with cream or custard.
