Voima-Papu Mämmi – traditional Finnish Easter dessert

Gluten-free "mämmi"

Ingredients

  • 250 g of dried plums
  • 250 g peeled potatoes
  • 1 l of water (saved from cooking the plums)
  • 2 dl buckwheat flour
  • 1½ dl Voima-Papu broad bean flour
  • 3 dl dark syrup
  • 1 dl organic honey
  • 1½ teaspoons of salt
  • 1 tablespoon ground orange peel

Method

  1. Peel and boil the potatoes. 
  2. Also boil the plums in plenty of water until soft. Afterwards, save 1l of the cooking water. 
  3. Puree the potatoes and also the plums with a stick blender.
  4. Add the other ingredients (buckwheat flour, broad bean flour, syrup, honey, salt and orange peel). Mix in approx. 1 liter of the saved plum cooking water.
  5. Pour the mixture into a 2.5 l cake tin and let the mixture sit at room temperature, covered, overnight. 
  6. Bake the mixture, the next day, in the oven at 150 degrees for approx. 2 hours. 
  7. Let the mixture cool at room temperature for a day, then put the mixture in the refrigerator.
  8. Mämmi can be eaten chilled with cream or custard.

The recipe makes about 12 servings.
